Saffron Shankarpali: Ingredients, Preparation Method

Ingredients required are:

1 1/2 to 2 1//2 cups of all-purpose flour

1/4 cup of rava or sooji

1/2 cup of sugar

1/2 cup of non-dairy milk like almond or soy

2 tbsp of vegetable oil

Oil for deep-frying

1 tsp of cardamom powder

A pinch of saffron

Take a vessel and place it on a stove, add milk, sugar, saffron, cardamom and oil and heat it well on a medium flame. Do stir the content until the sugar is fully dissolved. Once it is done then set aside to cool.

When the milk has cooled then add 1 1/2 cups of flour and stir well to mix.

In order to make a smooth dough, add more and more flour but a little at a time. please note that the dough shouldn’t be sticky and it should be much pliable to roll the dough.

Now wrap the smooth dough in a plastic wrap and keep it aside for an hour.

Take the dough and equally divide the content into four equal sections. Make these portions balls and roll into a disc of about 5-6 inches in diameter. You can make the disc thin or thick according to your wish.

Use a knife or pizza cutter to cut the disc into tiny diamond shaped that nearly one inch.

These diamond shaped snake is called shankarpalis.

Take a frying pan and pour sufficient oil to fry. When the oil is heated then add few shankarpalis to fry. Continue with the rest of the diamond shaped disc.

On the fried snacks you can sprinkle sugar powder if you wish to add more sweetness.
