Pinto-Bean & Brown-Rice Cakelets: Preparation Method

Ingredients required are:

1 cup of dried pinto beans, soaked and then cooked

1/4 cup of cilantro leaves, chopped

1 cup of cooked brown rice

1/2 medium red onion, minced

1 tsp of red chili powder

1 tbsp of ginger, grated

1/2 cup of vegan mayonnaise

3 garlic cloves, minced

2 tbsp of chickpea (garbanzo bean) flour

2 tbsp of canola oil

Salt to taste

Method of preparation:

Take a vessel and add the beans and rice slightly for mashing. When these two ingredients are well mashed then mix all the other ingredients except the oil and mash it again.

Take a non-stick skillet add oil to heat.

Take small lumps of the mixture of the pinto-bean-rice and shape into patties.

In the hot oil place them and for about 2 minutes cook each side or until crusty and nicely golden-brown.

Remove it from the oil and drain on a paper towel in order to soak up any excess oil and serve hot!
