Channar Payesh Recipe

Its Navratri time and the delicious Channar Payesh will make the celebrations even more sweeter. This is a popular Bengali dish and is made up of condensed milk, nuts and raisins. Its a mouthwatering delight to all the milk product lovers and tastes best when it is served chilled. Lets see how we can sweeten the celebrations with the delicious Channar Payesh.

Ingredients required to make channar payesh:

  • One and a half litre of milk ( add more if there are more members)
  • half a cup of sugar
  • one and a half table spoon of lemon juice
  • few strands of kesar
  • few almonds whicha are chopped
  • some raisins and pistachios

Keep the above ingredients ready and get into preparing the delicious Channar Payesh. Warm some milk and soak the saffron in it. Boil some milk in a shallow pan and add some lemon juice into it and keep stirring till the milk curdles.

The pour the Channa (curdled milk) on a muslin cloth and strain the whey. Cool it by dipping in ice cold water and strain again . Boil the remaining milk and add a pinch of saffron to it. Then add sugar and stir till it is completely dissolved. Smash channa in a bowl and add it to the milk to simmer again.

Add some almonds and raisins in the end and serve it chilled.
